Ingredients
  

Main Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened Make sure the butter is properly softened.
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract Optional: can substitute with maple syrup.

For the Filling

  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  • In another bowl, cream softened butter with granulated and brown sugars until fluffy.
  • Beat in the egg and vanilla extract until smooth.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • In a small bowl, combine brown sugar and cinnamon for the filling.
  • Spread half of the dough on parchment paper, sprinkle with filling, and roll it up tightly.
  • Slice into rounds and place on a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes or until they are golden brown.

Notes

Serve warm with a drizzle of icing and pair with coffee or milk. Store leftovers in an airtight container for 3-5 days or freeze for up to a month. Chilling the dough can help if it's sticky.
