Ingredients
  

Noodles and Sauce

  • 2 cups chow mein noodles Cook according to package instructions.
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce Can replace with vegan hoisin sauce.
  • 1 teaspoon sesame oil Can toast for extra flavor.

Vegetables and Spices

  • 2 cups mixed vegetables (bell peppers, carrots, broccoli) Feel free to swap in other colorful veggies.
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced

Protein (optional)

  • 1 cup protein (chicken, shrimp, or tofu) Choose one or leave out for a vegetarian dish.

Oil

  • 1 tablespoon vegetable oil For stir-frying.

Instructions
 

Preparation

  • Cook the chow mein noodles according to package instructions. Drain and set aside.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

Cooking

  • Toss in the mixed vegetables and protein (if using) to the skillet. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.
  • Add the cooked noodles to the skillet, followed by the soy sauce, oyster sauce, and sesame oil. Toss everything together to combine.
  • Season with salt and pepper to taste.

Serving

  • Serve hot and enjoy, topping with sesame seeds or chopped green onions if desired.

Notes

Chow Mein leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months. Add a splash of water when reheating to keep it moist.
