  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate ganache (for filling)

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • In another bowl, cream together the butter and sugars until light and fluffy.
  • Add the egg and vanilla extract, mixing well.
  • Gradually incorporate the dry ingredients into the wet mixture, stirring until combined.
  • Scoop tablespoon-sized portions of dough and roll them into balls, placing them on the prepared sheet.
  • Use your thumb or the back of a spoon to create a well in the center of each ball.

Baking

  • Bake for 10-12 minutes. Let them cool slightly on the tray.
  • Fill the center of each cookie with chocolate ganache.
  • Allow them to cool completely before serving.

Notes

For best results, refrigerate dough for 30 minutes if it's sticky. Enjoy cookies with powdered sugar on top or with a scoop of vanilla ice cream.
