Chocolate Strawberry Yogurt Clusters

Ingredients
  

For the yogurt mixture

  • 1.5 cups chopped strawberries Use ripe strawberries for the best flavor.
  • 1 cup plain Greek yogurt Chill the yogurt for better coating.
  • 1 tbsp honey
  • 1 tsp vanilla extract

For the chocolate coating

  • 1 cup semi-sweet chocolate chips Dark chocolate can be used for a richer flavor.
  • 2 tbsp coconut oil

Instructions
 

Preparation

  • In a large bowl, mix together chopped strawberries, plain Greek yogurt, honey, and vanilla extract until well combined.
  • Scoop about 2 tablespoons of the mixture onto a parchment paper-lined baking sheet to form clusters, aiming for about 10 clusters.
  • Freeze the clusters for 1-2 hours or until completely solid.

Chocolate Coating

  • In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 15-30 second intervals, stirring in between, until melted.
  • Remove the yogurt clusters from the freezer and dip each one into the melted chocolate using a spoon.
  • Place the coated clusters back on the prepared baking sheet and optionally sprinkle a bit of sea salt on top.

Final Freezing

  • Freeze again for a few more minutes to harden the chocolate. Enjoy your delicious treats!

Notes

These clusters can be stored in an airtight container in the freezer for up to two months. You can also add nuts or granola for extra crunch.
