  • 1 cup cooked rice Any type of rice can be used.
  • 1 piece chicken breast, cooked and diced Use rotisserie chicken for a quicker option.
  • 1 piece sweet potato, peeled and diced Alternatively, use butternut squash.
  • 1 cup broccoli florets Fresh or frozen broccoli can be used.
  • 2 tablespoons olive oil For roasting the vegetables.
  • Salt and pepper to taste Adjust according to preference.

Optional Toppings

  • avocado Adds creaminess.
  • sesame seeds For added crunch.
  • sauce Any desired sauce for extra flavor.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss the diced sweet potato and broccoli florets with olive oil, salt, and pepper.

Cooking

  • Spread them on a baking sheet and roast for about 20-25 minutes, or until tender.
  • In a bowl, combine the cooked rice, roasted sweet potato, broccoli, and diced chicken.
  • Mix well and top with optional toppings if desired.
  • Serve warm and enjoy!

Notes

Store leftovers in an airtight container for up to 3-4 days in the fridge. Can also be frozen for up to 3 months. Reheat in microwave or stovetop.
