Ingredients
  

Marinade

  • 2 lbs chicken thighs, boneless and skinless
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon ground cinnamon
  • Salt and pepper, to taste

Serving

  • 1 cup plain yogurt
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • Pita bread or flatbreads for serving
  • Lettuce, tomatoes, and cucumbers for garnish

Instructions
 

Preparation

  • In a mixing bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, turmeric, ground cinnamon, salt, and pepper.
  • Add the boneless, skinless chicken thighs to the marinade, ensuring they are completely coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight.

Cooking

  • Preheat your grill or a skillet over medium-high heat.
  • Once hot, add the marinated chicken and cook for 5-7 minutes on each side until cooked through and golden-brown.
  • After cooking, remove the chicken from the heat and let it rest for a few minutes. Then, slice it thinly against the grain.

Garlic Sauce

  • Prepare the garlic sauce by mixing the plain yogurt, tahini, and lemon juice in a separate bowl.

Serving

  • Serve the sliced chicken in warm pita bread or flatbreads, topped with fresh lettuce, chopped tomatoes, and sliced cucumbers. Drizzle with garlic sauce.

Notes

Marinate the chicken overnight for more flavor. Add cumin or paprika to the garlic sauce for extra flavor. Customize your shawarma to your taste.
