  • 2 pieces chicken breasts Boneless and skinless.
  • 2 cups fresh tomatoes, diced Can use canned tomatoes if needed.
  • 3 cloves garlic, minced Freshly minced for best flavor.
  • 1/4 cup fresh basil, chopped Substitute dried basil if fresh is unavailable.
  • 1/4 cup grated Parmesan cheese Can substitute with mozzarella if preferred.
  • 2 tablespoons olive oil For cooking the chicken.
  • to taste Salt and pepper Adjust to personal preference.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Season chicken breasts with salt and pepper, and add them to the skillet. Cook for about 5-6 minutes on each side until golden and cooked through.
  • Remove chicken from the skillet and set aside.
  • In the same skillet, add garlic and sauté for 30 seconds.
  • Add diced tomatoes and cook for about 5 minutes, until soft.
  • Stir in fresh basil and Parmesan cheese.
  • Return chicken to the skillet, spooning the sauce over the top.
  • Cook for an additional 2-3 minutes to heat through.
  • Serve hot.

Notes

For extra flavor, marinate the chicken in balsamic vinegar before cooking. This dish can also be made vegan by substituting grilled zucchini or eggplant for the chicken and using dairy-free cheese. Leftovers can be stored in the fridge for up to 3 days or frozen for 3 months.
