  • 2 cups shredded chicken Use pre-cooked rotisserie chicken for less prep time.
  • 16 oz package of gnocchi Follow package instructions for cooking.
  • 2 cups mixed vegetables (carrots, celery, spinach)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced Sauté until fragrant for best flavor.
  • 4 cups chicken broth
  • 1 cup heavy cream Can substitute with coconut milk for a lighter option.
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add minced garlic and sauté until fragrant.
  • Toss in the shredded chicken and mixed vegetables, cooking for a few minutes until they start to soften.
  • Stir in chicken broth and bring to a simmer.
  • Add the gnocchi and cook according to package instructions.
  • Once the gnocchi is cooked, stir in heavy cream and dried thyme.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

This soup can be stored in the fridge for 3-4 days or frozen for up to 3 months. Reheat on the stove or in the microwave and add a splash of broth if it seems too thick.
