  • 2 cups shredded chicken Use pre-cooked rotisserie chicken for less prep time.
  • 1 package (16 oz) gnocchi
  • 2 cups mixed vegetables (carrots, celery, spinach) You may also use other vegetables.
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced Toast the garlic for better flavor.
  • 4 cups chicken broth Add more if soup is too thick.
  • 1 cup heavy cream Can substitute with coconut milk for a healthier option.
  • 1 teaspoon dried thyme
  • to taste Salt and pepper

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add minced garlic and sauté until fragrant.
  • Toss in the shredded chicken and mixed vegetables, cooking for a few minutes until they start to soften.
  • Stir in chicken broth and bring to a simmer.
  • Add the gnocchi and cook according to package instructions.
  • Once the gnocchi is cooked to perfection, stir in heavy cream and dried thyme.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

Store in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Reheat and add extra broth if needed.
