Ingredients
  

Pasta

  • 1 cup elbow macaroni Cooked until al dente

Cheese Sauce

  • 1 cup sharp cheddar cheese, shredded Use fresh cheese for better melting
  • 1 cup Monterey Jack cheese, shredded Use fresh cheese for better melting
  • 2 cups whole milk Gradually whisked in
  • 4 tablespoons butter Melted for the roux
  • 2 tablespoons all-purpose flour Used to create a roux
  • to taste salt For seasoning
  • to taste pepper For seasoning

Preparation

  • Cook the elbow macaroni in salted boiling water until al dente. Drain and set aside.
  • In a saucepan over medium heat, melt the butter. Stir in the flour, cooking for about 2 minutes until it turns golden to create a roux.
  • Gradually whisk in the milk, stirring until thickened (about 5-7 minutes).
  • Remove from heat and add cheddar and Monterey Jack cheese until melted. Season with salt and pepper.
  • Combine the cooked macaroni with the cheese sauce until well-coated.

Baking (optional)

  • Transfer to a greased baking dish and bake at 350°F (175°C) for about 20 minutes until bubbly and golden.

Notes

For a crispy top, bake the mac and cheese in the oven. Store leftovers in an airtight container in the fridge for 3-5 days. Reheat in the microwave or oven.
