  • 1 cup pumpkin puree Canned or fresh
  • 1 cup brown sugar
  • 1/2 cup granulated sugar Plus an additional 1/4 cup for topping
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in the egg, pumpkin puree, and vanilla extract until fully combined.
  • In another bowl, whisk together the flour, baking soda, baking powder, pumpkin spice, and salt.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.

Baking

  • Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  • Sprinkle the tops with granulated sugar.
  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, let the cookie dough chill in the fridge for 30 minutes before baking. Store in an airtight container for up to a week at room temperature or freeze for up to a month.
