  • 1 cup unsalted butter, softened Use good quality butter for best results.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup maraschino cherries, chopped Can substitute with fresh cherries; pat dry before chopping.
  • 1/2 cup shredded coconut
  • 1/2 cup walnuts, chopped Can swap with pecans or almonds.
  • 1/4 teaspoon salt
  • for rolling Additional powdered sugar

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream the softened butter and powdered sugar together until light and fluffy.
  • Stir in the vanilla extract.
  • Gradually add the flour and salt, mixing until combined.
  • Fold in the chopped maraschino cherries, shredded coconut, and walnuts.
  • Scoop tablespoon-sized portions of the dough and roll them into balls.
  • Place the balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  • Bake for 12-15 minutes, or until the bottoms are lightly golden.
  • Let them cool for a few minutes before rolling them in powdered sugar.

Notes

Store in an airtight container at room temperature for 5-7 days. Layer with parchment paper if necessary to avoid sticking.
