  • 1 large onion, chopped Provides a base flavor
  • 2 cloves garlic, minced Enhances flavor
  • 4 cups chicken broth Make sure to use gluten-free broth if necessary
  • 1 cup heavy cream Can substitute with milk for a lighter version
  • to taste Salt and pepper Adjust according to preference
  • for garnish Green onions Chopped for serving

Cooking

  • In a large pot, sauté the onion and garlic until translucent.
  • Add the diced ham and cook for a few minutes.
  • Stir in the diced potatoes and chicken broth. Bring to a boil, then simmer until the potatoes are tender.
  • Reduce the heat and add the heavy cream and shredded cheese, stirring until melted.
  • Season with salt and pepper.
  • Serve hot, garnished with green onions.

Notes

Great served with fresh bread or crackers. For added flavor, use smoked ham or spices like paprika. To thicken, mash some potatoes or add a flour-water slurry. This chowder can be stored in the fridge for 3-4 days or frozen in portions.
