Preparation

  • In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  • Toss in the diced potatoes and chicken broth. Bring to a boil, then reduce heat, and simmer for about 15-20 minutes or until the potatoes are tender.
  • Stir in the diced ham and milk. Keep cooking until everything is heated through.
  • Add the shredded cheddar cheese and stir until it’s melted and well combined.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with green onions if desired. Pair with crusty bread or warm biscuits.

Notes

For extra flavor, add garlic when sautéing onions. This soup can be stored in the fridge for 3-4 days and freezes well for 2-3 months.
