  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon dried Italian herbs
  • 1 pound ground beef or turkey
  • 1 jar marinara sauce (about 24 oz)
  • 1 cup shredded cheese (mozzarella or cheddar)
  • to taste salt and pepper
  • Fresh parsley for garnish (optional)

Preparation

  • Preheat your oven to 400°F (200°C).
  • Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  • Drizzle with olive oil, sprinkle with salt and pepper, and place cut side down on a baking sheet.
  • Roast the squash in the oven for about 30-35 minutes, or until the flesh is tender.

Cooking the Sauce

  • While the squash is roasting, heat a skillet over medium heat and melt the butter.
  • Add the minced garlic and Italian herbs, then sauté until fragrant.
  • Add the ground meat and cook until browned. Drain excess fat.
  • Combine the meat with marinara sauce and let it simmer for about 5-10 minutes.

Assembly

  • Once the spaghetti squash is done, use a fork to shred the inside into strands.
  • Toss the squash strands with the garlic herb butter mixture.
  • Layer the squash with the meat sauce, top with shredded cheese, and return to the oven for an additional 10 minutes until cheese is melted and bubbly.
  • Garnish with fresh parsley if desired and serve hot.

Notes

This dish can be prepared ahead of time. Store leftovers in the fridge for about 3-5 days or freeze for up to 3 months. Reheat in the oven or microwave when ready to enjoy.
