  • 1 lb ground chicken Can substitute with ground turkey or plant-based alternative.
  • 1 medium bell pepper, diced Adds crunch and flavor.
  • 1 medium onion, diced For additional flavor.
  • 2 cups cooked rice Can substitute with quinoa or couscous.
  • 1 cup shredded cheese Use your favorite type of cheese.
  • 4 large tortillas For wrapping the burritos.
  • Salt and pepper to taste Season to your preference.
  • Oil for toasting For the skillet.

Preparation

  • In a skillet, cook the ground chicken over medium heat until browned.
  • Add the diced bell pepper and onion, and sauté until the vegetables are tender.
  • Stir in the cooked rice and shredded cheese, mixing until the cheese is melted.
  • Season with salt and pepper to taste.
  • Lay out the tortillas and spoon the chicken mixture onto each.
  • Roll the tortillas tightly into burritos.

Cooking

  • In a skillet, heat a little oil over medium heat and toast the burritos until crispy on both sides.
  • Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat in the microwave or oven for desired crispness.
