  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese (or mozzarella-cheddar blend)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley (for garnish) optional but recommended

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  • Place the chicken breasts in the dish. Drizzle with 1 tbsp olive oil and season with Italian seasoning, garlic powder, paprika, salt, and pepper.
  • Toss the sliced peppers and onions with the remaining olive oil, then arrange them around the chicken.

Baking

  • Bake uncovered for 20-25 minutes until the chicken reaches 165°F (74°C) internally.
  • Sprinkle mozzarella and Parmesan over the chicken and peppers, then return to the oven for 3-5 minutes or until the cheese is melted and bubbly.

Serving

  • Garnish with parsley and serve hot with rice, pasta, or salad.
