  • 16 oz jar of salsa Reserve some for topping if desired.
  • 1 cup black beans, drained and rinsed Can be swapped with lentils.
  • 1 cup corn (frozen or canned) Adds sweetness.
  • 1 packet taco seasoning Feel free to adjust based on spice preference.

Instructions
 

Preparation

  • Place the chicken thighs in the bottom of your crockpot.
  • Pour the salsa over the chicken, then sprinkle the black beans and corn.
  • Toss the taco seasoning right in there.
  • Gently mix it all together to ensure even coverage.

Cooking

  • Cover and cook on low for 6-8 hours or high for 4-5 hours.

Notes
