Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they are tender.
  • While the sweet potatoes are cooking, slice the sausage.
  • Add the sausage to the skillet and continue to cook for another 5-7 minutes, until the sausage is browned and cooked through.
  • In a small bowl, mix together the honey, minced garlic, salt, and pepper.
  • Pour the honey garlic sauce over the sausage and sweet potatoes, stirring to coat everything evenly.
  • Cook for an additional 2-3 minutes until the sauce thickens a bit.
  • Serve warm, garnished with chopped green onions if desired.
