Ingredients
  

For the crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar

For the cheesecake filling

  • 4 packages (8 oz) cream cheese, softened Make sure it's at room temperature.
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups diced apples Use your favorite apple variety.
  • 1 cup caramel sauce Extra caramel for drizzling recommended.
  • 1 teaspoon ground cinnamon

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine graham cracker crumbs, melted butter, and sugar to form a crust.
  • Press the mixture into the bottom of a greased 9×13 inch baking dish.

Making the Filling

  • In a large mixing bowl, beat the cream cheese until smooth.
  • Add sugar and vanilla extract, mixing well.
  • Add eggs one at a time, beating well after each addition.
  • Fold in diced apples and cinnamon.
  • Pour the cream cheese mixture over the crust.

Baking

  • Bake for 35-40 minutes or until the center is set.
  • Let cool and then drizzle with caramel sauce before slicing into bars.

Notes

Chill in the fridge for a bit to deepen the flavors. Serve with extra caramel and ice cream for a gourmet touch.
