Preparation

  • In a large pot, sauté diced andouille sausage until browned.
  • Add chopped potatoes and mixed vegetables, stirring to combine.
  • Sprinkle Cajun spices over the mixture, and pour in enough water or broth to cover the ingredients.

Cooking

  • Bring to a boil, then reduce heat and simmer until potatoes are tender.
  • Stir in heavy cream and shredded cheddar cheese, mixing until cheese melts and the soup is creamy.
  • Serve hot, garnished with additional cheese or green onions if desired.

Notes

Letting the soup simmer longer helps flavors meld together. This soup keeps well in the fridge for about 3-4 days or can be frozen for up to three months. If reheating thickened soup, add a splash of broth.
