Cookie Dough

  • 1 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 cup Light brown sugar, packed
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 1/4 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 2 cups Chopped pecans

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in eggs one at a time, then add vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in chopped pecans.
  • Refrigerate the dough for at least 1 hour (or up to 2 days) to chill and firm it up.

Baking

  • Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10–12 minutes, or until the edges are golden and the centers are slightly soft.
  • Remove from the oven and cool on the baking sheet for 2 minutes, then transfer them to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a little sea salt on top before serving. Store cookies in an airtight container for up to a week or freeze for longer storage.
