Ingredients
  

For the cookie dough

  • 1 cup Unsalted butter, softened Room temperature for best results
  • 3/4 cup Granulated sugar
  • 3/4 cup Light brown sugar Packed
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour Sifted
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Chopped pecans Toast for extra flavor, if desired

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cream together softened butter, granulated sugar, and light brown sugar until the mixture is light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, sift together all-purpose flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the butter-sugar mixture to form a soft dough.
  • Fold in the chopped pecans.
  • Chill the dough for about 1 hour.

Baking

  • Scoop the dough and roll it into balls. Place them on a parchment-lined baking sheet, spacing them apart.
  • Bake until the edges are golden and the centers are still soft, roughly 9–12 minutes.
  • Cool the cookies on a wire rack before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. Can be frozen with parchment paper in between layers.
