  • 2 cups shredded rotisserie chicken Cooked and shredded
  • 1 cup cheddar cheese Shredded
  • 1 cup mozzarella cheese Shredded
  • 0.5 cups buffalo sauce More to taste
  • 1 packet ranch seasoning Store-bought or homemade

Egg Roll Wrapping

  • 8 pieces egg roll wrappers
  • as needed spray oil For frying (if needed)

Preparation

  • In a bowl, mix the shredded rotisserie chicken, cheddar cheese, mozzarella cheese, buffalo sauce, and ranch seasoning until well combined.
  • Lay an egg roll wrapper on a clean surface, place a spoonful of the chicken mixture on the wrapper, and fold it according to package instructions.

Cooking

  • Preheat the air fryer to 375°F (190°C).
  • Lightly spray the egg rolls with oil and place them in the air fryer basket in a single layer.
  • Cook for 10-12 minutes or until golden brown and crispy, flipping halfway through. Alternatively, fry them in hot oil or bake at 425°F (220°C) for about 15-20 minutes until crispy.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze unwrapped egg rolls for up to 2 months. Use high-quality buffalo sauce for the best flavor. For an extra crispy finish, lightly oil the wrappers before air frying.
