Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

For the filling

  • 1 cup brown sugar for filling
  • 1 tablespoon cinnamon

For the icing

  • 1 cup powdered sugar for icing
  • 1-2 tablespoons milk for icing consistency

For decoration

Instructions
 

Preparation

  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, combine the flour, baking powder, baking soda, and salt. Gradually add this to the wet mixture, mixing just until everything is combined.
  • In a small bowl, mix the brown sugar and cinnamon. Set this sweet goodness aside.

Assembly

  • Divide the dough into two equal portions. Roll out one portion on a floured surface to about 1/4 inch thick.
  • Cut into rectangles (about 3x4 inches). Repeat with the second portion.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Place 1 tablespoon of the brown sugar filling in the center of a rectangle. Top it with another rectangle and seal the edges.
  • Repeat this process until you’ve assembled all your cookies.

Baking

  • Bake for 12-15 minutes, or until they’re lightly golden brown.
  • Cool for 5 minutes on the baking sheet before transferring them to a wire rack.

Icing

  • Mix the powdered sugar with 1-2 tablespoons of milk until you get a smooth icing consistency, then drizzle it over the cooled cookies.
  • Add sprinkles if you’re feeling festive!

Notes

Chill the dough if it feels too soft for easier rolling. You can freeze the unbaked cookies for up to a month. Consider using different flavor extracts or swapping out brown sugar for coconut sugar for a unique twist.
