Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the brown sugar, granulated sugar, and butter until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Baking

  • Drop spoonfuls of dough onto ungreased baking sheets.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let cool on the baking sheets for a few minutes before transferring to wire racks.

Notes

For extra flavor, swirl in a bit of cinnamon sugar between layers of dough before baking. Cookies will last for about a week in an airtight container at room temperature. For longer storage, freeze them for up to three months.
