Preparation

  • In a large pot, heat olive oil over medium heat and sauté the onion until it’s translucent.
  • Add garlic and cook for another minute.
  • Stir in the broccoli and cook for a few minutes until it brightens up.
  • Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the broccoli is tender.
  • Blend the mixture until smooth, then return it to the heat.
  • Stir in the milk and cheddar cheese, cooking until the cheese is melted and the soup is creamy. Season with salt and pepper to taste.

Notes

Serve with crunchy sides like warm crusty bread or croutons. Best stored in the fridge for up to 4 days, or freeze for future meals.
