Ingredients
  

Filling

  • 1 package Sausage Cooked and browned
  • 2 cups Potatoes Boiled or steamed and chopped
  • 1 cup Cheese Shredded (cheddar or queso)
  • 6 large Eggs Whisked with cream and seasoning
  • 1 cup Cream For richness
  • to taste Salt Season to taste
  • to taste Pepper Season to taste

Base

  • 6 large Flour tortillas Flexible base for the enchiladas

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Cook the sausage in a skillet until browned and fully cooked.
  • Boil or steam the potatoes until tender, then chop them.
  • In a bowl, whisk together the eggs, cream, salt, and pepper.

Assembly

  • Lay out a flour tortilla and fill it with sausage, potatoes, and cheese.
  • Roll the tortilla and place it seam-side down in a greased baking dish.
  • Repeat with all tortillas.

Baking

  • Pour the egg mixture over the assembled enchiladas.
  • Bake for 25-30 minutes or until the eggs are set and the top is golden.
  • Let it cool for a few minutes before serving.

Notes

Customize the fillings to your liking! You can add veggies or use chorizo for a spicy flavor.
