Main Ingredients

  • 2 pounds pork sausage Can substitute with turkey sausage.
  • 12 pieces eggs Can use egg substitutes.
  • 1 cup sour cream Can use light or regular.
  • 1/4 cup milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 pieces green onions
  • 1/2 pieces green bell pepper, diced
  • 1/2 pieces red bell pepper, diced
  • 2 cups shredded cheddar cheese Can increase to taste.

Preparation

  • Preheat the oven to 350°F (175°C). Spray a 9x13 inch pan with cooking spray.
  • In a large bowl, combine eggs, sour cream, milk, cheese, salt, and pepper. Mix just until combined.
  • Heat a large skillet over medium heat. Add the sausage and cook until browned, breaking it into small pieces. Drain most of the grease and toss it into the bowl with your egg mixture.
  • In the same skillet, sauté the bell peppers and onions for 2-3 minutes. Add these to your bowl and stir everything together.
  • Pour the mixture into your greased pan and bake for 35-50 minutes, until the edges are set and the center is just a bit jiggly.

Notes

Store leftovers tightly wrapped or in an airtight container for 3-4 days. Reheat in the microwave.
