  • 2 pieces ripe bananas The riper, the better for extra sweetness.
  • 2 cups rolled oats Use certified gluten-free oats for a gluten-free version.
  • 1/2 teaspoon cinnamon Adds warmth and spice.
  • 1/4 cup honey or maple syrup Optional for sweetness.
  • 1/2 cup nuts or chocolate chips Optional, can be substituted with dried fruit or seeds.
  • 1/4 teaspoon salt Enhances sweetness and flavors.
  • 1/2 teaspoon vanilla extract Optional for added flavor.

Preparation

  • Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  • In a mixing bowl, mash the bananas until smooth.
  • Add the oats, cinnamon, salt, honey or maple syrup, nuts or chocolate chips, and vanilla extract to the bowl. Mix until combined.
  • Spread the mixture evenly into the prepared baking pan.

Baking

  • Bake for 25-30 minutes or until the edges are golden brown.
  • Allow to cool before cutting into bars.

Notes

Store in the fridge for about a week or freeze for up to three months. Thaw at room temperature or warm in the microwave for a few seconds before serving. Serve with Greek yogurt and honey for a creamy contrast or with coffee.
