  • 2 cups rolled oats Use certified gluten-free oats for gluten-free bars.
  • 1/2 teaspoon cinnamon Adds warmth and flavor.
  • 1/4 cup honey or maple syrup Optional for sweetness.
  • 1/2 cup nuts or chocolate chips Optional mix-ins.
  • 1/4 teaspoon salt Elevates sweetness and flavors.
  • 1/2 teaspoon vanilla extract Optional for flavor.

Preparation

  • Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • In a mixing bowl, mash the bananas until smooth.
  • Add the oats, cinnamon, salt, honey/maple syrup, nuts or chocolate chips, and vanilla extract to the bowl. Mix until combined.
  • Spread the mixture evenly into the prepared baking pan.

Baking

  • Bake for 25-30 minutes or until the edges are golden brown.
  • Allow to cool before cutting into bars.

Notes

These bars can be stored in the fridge for about a week, or freeze them tightly for up to three months. Serve with Greek yogurt and honey or with a hot cup of coffee.
