  • 4 medium potatoes, diced
  • 1 bell pepper, diced
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder

  • for garnish Fresh parsley

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix together diced potatoes, bell pepper, onion, olive oil, garlic powder, salt, and pepper until evenly coated.
  • Spread the veggies out on a baking sheet.
  • Nestle the Italian sausages among the veggies on the sheet.

Cooking

  • Bake for about 25-30 minutes, or until the sausages are cooked through and the potatoes are golden and crispy.
  • Garnish with parsley before serving.

Notes

Serve straight from the pan or on bright plates. Add a green salad or crusty bread for a complete meal. Store leftovers in the fridge for 3-4 days.
