Ingredients
  

Bouillon Powder

  • 1.5 tablespoons nutritional yeast flakes See Recipe Notes
  • 1 teaspoon minced dried onion or 1/2 teaspoon onion powder
  • 0.25 teaspoon dried parsley
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon dried thyme
  • 0.125 teaspoon dried turmeric optional

Meatballs

  • 1 large egg
  • 5 tablespoons mayonnaise
  • 1 pound ground chicken
  • 0.5 cup panko-style breadcrumbs gluten-free if necessary
  • 2 ounces Parmesan cheese shredded
  • as needed Olive oil for brushing or cooking oil spray

Instructions
 

Prepare Bouillon Powder

  • Combine the nutritional yeast, dried onion, parsley, garlic powder, thyme, and turmeric in a bowl. Mix it well.

Make Meatballs

  • In a large bowl, combine the ground chicken, breadcrumbs, egg, mayonnaise, Parmesan cheese, and vegetable bouillon mix.
  • Form the mixture into small meatballs and place them on a greased baking sheet.
  • Brush the tops with olive oil.

Bake

  • Bake them at 400°F (204°C) for about 20-25 minutes until perfectly golden brown.

Notes

You can substitute ground turkey for the chicken, and add red pepper flakes for spice or fresh herbs for flavor.
