Authentic Carbonara

Ingredients
  

Main ingredients

  • 200 g spaghetti
  • 100 g pancetta Use good-quality for maximum flavor.
  • 2 large egg yolks Timing is everything: combine off heat to avoid scrambling!
  • 50 g grated Parmesan cheese For serving, add more if desired.
  • Salt and pepper to taste
  • 1 clove garlic (optional) Add for flavor if desired.
  • Parsley for garnish (optional)

Cooking

  • Cook the spaghetti according to package instructions in salted water.
  • Meanwhile, in a pan, cook the pancetta until crispy. If using, add minced garlic and sauté for a minute.
  • In a bowl, whisk together the egg yolks, grated Parmesan, and a pinch of pepper.
  • Once the pasta is cooked, reserve 1 cup of pasta water, then drain the spaghetti.
  • Add the hot pasta to the pan with pancetta and mix well.
  • Remove from heat and quickly stir in the egg mixture, adding reserved pasta water a little at a time until you achieve a creamy consistency.
  • Serve immediately, garnished with extra Parmesan and parsley if desired.

Notes

Got leftovers? Store them in an airtight container in the fridge for up to 3 days. Reheat in a pan over low heat, adding a splash of water or olive oil to loosen the sauce.
