  • 1 lb chicken breast, cut into strips Use chicken thighs for extra juiciness if desired.
  • 1 cup mango puree Peach or pineapple puree can be used as substitutes.
  • 2 tablespoons soy sauce Adds savory depth to the marinade.
  • 1 tablespoon honey Can be adjusted based on sweetness preference.
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Oil for cooking
  • Skewers (if needed)

Instructions
 

Preparation

  • In a bowl, mix the mango puree, soy sauce, honey, garlic, ginger, cornstarch, salt, and pepper to create the marinade.
  • Marinate the chicken strips in the mango glaze for at least 30 minutes (the longer, the better!).

Cooking

  • Preheat a pan or grill over medium heat.
  • If using skewers, thread the marinated chicken onto them.
  • Cook the chicken for about 5-7 minutes on each side until fully cooked and slightly caramelized.

Serving

  • Serve as appetizers or a main dish.

Notes

Extra tips: Marinate longer than 30 minutes for more flavor. Use tofu for a vegan version or add sriracha for a spicy kick. Leftovers keep refrigerated for 3-4 days or frozen for up to 3 months.
