Ingredients

Vegetables

  • 1 bunch Asparagus, trimmed
  • 1 pound Brussels sprouts, halved
  • 2 medium Zucchini, sliced
  • 3 Carrots, cut into sticks
  • 2 Bell peppers, sliced
  • 1 head Cauliflower, cut into florets
  • 1 head Broccoli, cut into florets
  • 1 pound Green beans, trimmed
  • 2 Sweet potatoes, cubed

Seasonings

  • 2-3 tablespoons Olive oil
  • Salt & pepper to taste
  • 1 teaspoon Garlic powder (optional)
  • Parmesan cheese for topping (optional)
  • Paprika for extra flavor (optional)

Instructions

Preparation

  • Wash and cut your choice of veggies. Make them bite-sized for easy munching.
  • Toss the veggies in olive oil, salt, pepper, and any additional spices (garlic powder and paprika, if you’re feeling spicy!).

Cooking

  • Place the veggies in the air fryer basket in a single layer. Don’t overcrowd—give them space!
  • Cook at 375°F (190°C) for about 10-15 minutes, shaking the basket halfway through for even cooking.
  • If you like them extra crispy, add a couple more minutes. Top with Parmesan if desired.

Notes

Got leftovers? Let them cool completely, then store them in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for a few minutes to revive crispiness. Cut uniform pieces for even cooking and don't skip the olive oil for that golden crisp. Experiment with spices for different flavors.
