Ingredients
  

Main ingredients

  • 2 lb baby potatoes (900 grams)
  • 1/2 cup grated Parmigiano Reggiano note 1
  • 1 tsp dried Italian seasoning note 2
  • 1/2 tsp garlic powder
  • A pinch of kosher salt
  • A pinch of ground black pepper
  • 1 tbsp olive oil or your favorite oil for roasting

Preparation

  • Clean and cut the baby potatoes by rinsing them and slicing them in half. Chop any oversized ones into thirds or quarters for even cooking.
  • In a bowl, combine the dried Italian seasoning, garlic powder, salt, pepper, and half of the grated Parmigiano Reggiano. Add olive oil and mix until all potatoes are coated.

Cooking

  • Preheat your air fryer for about 3 minutes or according to the manufacturer's instructions.
  • Toss the seasoned potatoes into the air fryer at 380°F (190°C) and cook for around 25 minutes, shaking the basket at the 10 and 15-minute marks.

Final Touches

  • After cooking, toss the potatoes with the remaining Parmigiano Reggiano and add salt and pepper to taste. Serve hot.

Notes

These potatoes are best when served hot. Pair with dipping sauces like ranch or aioli. Store leftovers in an airtight container for up to 3 days; reheat in the air fryer for best results.
