Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt Pinch of salt

Wet Ingredients

  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • In a mixing bowl, combine the flour, sugar, baking powder, and a pinch of salt.
  • In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix; we want light and fluffy, not tough!
  • Pour the batter into silicone muffin cups until they're about 2/3 full.
  • Preheat your air fryer to 320°F (160°C).
  • Place the cups in the air fryer basket and cook for about 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool slightly before removing from cups and enjoy!

Notes

Store muffins at room temperature in an airtight container for up to 3 days, or in the refrigerator for up to a week. For longer storage, freeze in a freezer bag for up to 3 months.
