For the cake

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preparation

  • In a mixing bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until well combined.
  • In a separate bowl, mix the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the grated carrots and nuts, if using.

Cooking

  • Preheat your air fryer to 320°F (160°C).
  • Pour the batter into a greased air fryer-safe cake pan.
  • Cook in the air fryer for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool before serving.

Notes

For serving, you can top with cream cheese frosting or powdered sugar. It can be stored in an airtight container for up to 3 days at room temperature or about a week in the fridge.
