Main ingredients

  • 3–4 lb chuck roast Use a heavy cut for best results.
  • 1 tbsp olive oil For searing the roast.
  • 1 large onion, sliced
  • 4 medium carrots, cut into chunks
  • 4 medium gold potatoes, quartered
  • 3 cloves garlic, minced Toast the garlic for added flavor.
  • 2 cups beef broth Can substitute with vegetable broth for a vegan option.
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 leaf bay leaf

Instructions
 

Preparation

  • Season the roast with salt and pepper on all sides.
  • In a hot skillet, sear the roast for 2–3 minutes per side.
  • Place the onion, carrots, and potatoes into the slow cooker.
  • Add the garlic, thyme, bay leaf, and Worcestershire sauce.
  • Put the seared roast on top of the vegetables.
  • Pour in the beef broth around the sides.

Cooking

  • Cover and cook on low for 8 hours or high for 4–5 hours.
  • Remove the bay leaf before serving and let rest for 10 minutes before slicing.

Notes

Letting the roast rest before slicing helps with juiciness. Can be served with crusty bread to soak up the broth.
