Ingredients
  

For the Caramel

  • 1 cup packed medjool dates, pitted
  • 2 tablespoons creamy almond butter (or any nut/seed butter)
  • 1 tablespoon coconut oil, melted

For the Chocolate Coating

  • 1 cup chocolate chips (or an 8-ounce chocolate bar)
  • 2 teaspoons coconut oil, melted (for melting with chocolate)

Instructions
 

Preparation

  • Soak the dates in a bowl of very hot water for 10 minutes to soften them.
  • Drain the dates and place them in a food processor. Add almond butter and melted coconut oil, then pulse until completely smooth.
  • Pour the date caramel mixture into a 9×5-inch loaf pan lined with parchment paper. Freeze for 2-3 hours until firm to the touch.
  • Once firm, lift the date caramel out of the pan and cut it into 12 small squares.

Chocolate Coating

  • In a heat-safe bowl, melt the chocolate chips and 2 teaspoons of coconut oil until smooth.
  • Coat each caramel square in the melted chocolate and transfer to a parchment-lined plate.
  • Let the dipped caramels set in the fridge for 1 hour before enjoying.

Notes

These date caramels can be stored in the fridge for about two weeks. For longer storage, keep them in the freezer for up to three months. Serve them with a cup of tea or coffee for a delightful treat.
