  • 4 cups all-purpose flour

  • 2 tbsp soy sauce
  • 6 cups vegetable broth seasoned for simmering
  • 1 tsp garlic powder
  • 2 tsp onion powder

Instructions
 

Preparation

  • Mix flour and water in a large bowl to form a shaggy dough.
  • Knead the dough on a clean surface for 8–10 minutes, adding more flour if it feels sticky.
  • Rest the dough in water for 1–2 hours.
  • Squeeze and rinse the dough underwater repeatedly, tossing out the starchy water after the first few washes, until it feels elastic and beige.

Cooking

  • Shape the dough into a braid or knot, and simmer it in seasoned broth for 1 hour, flipping halfway through.
  • Cool the dough in the broth, then shred it with forks and use as desired.

Notes

Leftovers can be stored in broth for up to 7 days or frozen for up to three months. To warm, thaw in the fridge overnight and heat gently.
