  • 1/2 cup milk
  • 1 cup mixed vegetables (such as bell peppers, spinach, and onions) Feel free to use leftover veggies!
  • 1 cup shredded cheese (such as cheddar or mozzarella) Add more for extra cheesiness!

Preparation

  • Preheat the air fryer to 300°F (150°C).
  • In a bowl, whisk together the eggs and milk.
  • Add the mixed vegetables, cheese, salt, and pepper, and stir until well combined.
  • Spray the air fryer basket with olive oil.
  • Pour the egg mixture into the basket and spread it evenly.

Cooking

  • Cook in the air fryer for 10-12 minutes or until the eggs are set and the top is golden.
  • Remove and let it cool slightly before slicing. Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat in the air fryer or microwave before serving. Experiment with different veggies for unique flavors.
