Description

For the Chicken:

  • 2 bone-in, skin-on chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

For the Garlic Butter:

  • 3 tbsp unsalted butter, softened
  • 3 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped
  • Zest of 1 lemon
  • Juice of ½ lemon

Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C).

  2. Make the Garlic Butter:
    In a small bowl, mix butter, garlic, rosemary, thyme, parsley, lemon zest, and lemon juice until well combined.

  3. Prepare the Chicken:
    Pat the chicken dry with a paper towel. Gently loosen the skin and spread the garlic butter under the skin, then rub some over the top.

  4. Sear the Chicken:
    Heat olive oil in an ovenproof skillet over medium-high heat. Sear the chicken, skin-side down, for 3–4 minutes until golden brown.

  5. Roast the Chicken:
    Flip the chicken and transfer the skillet to the oven. Roast for 25–30 minutes, or until the internal temperature reaches 165°F (75°C).

  6. Let It Rest & Serve:
    Remove the chicken from the oven and let it rest for 5 minutes before serving. Enjoy!

  • For extra crispiness, broil the chicken for the last 3–5 minutes of cooking.
  • Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C) without overcooking.
